Just as they were speaking, the steward brought in their allowance: a tray of white rice, a tray of white flour, two bundles of green vegetables, four cakes of beancurd, two rolls of wheat gluten, a tray of dried bamboo shoots and a tray of tree-ear fungus.
乾 is gān, dried — not the qián of the trigram, which is what the machine reaches for here and again at the stove in the next passage. 應 is yìng in 支應, to furnish or supply.

Tripitaka had his disciples take the things in, and thanked the steward.
教 is jiào, to bid somebody do something — the everyday spoken sense, not the jiāo of teaching.
總評 Commentary
Seven items, each with its measure, and the list is the whole substance of the passage. Nothing is described and nothing is praised. The effect comes from the plainness of the inventory, which is exactly what a government office issuing rations against a schedule would produce.
It is also entirely vegetarian, and nobody had to ask. The office knows what a monk eats, and the kingdom's courtesy shows itself in a form the pilgrims will not have to negotiate.
